One of my hobbies is to experiment when I’m at the kitchen and I have tons of fun when it comes to mixing elements from different cultures. That’s why I got really excited when I was offered to prepare a recipe with El Yucateco® Hot Sauce (I’m sharing a coupon with all of you). I came up with this «Latin-fusion» recipe: Spanish omelette (tortilla de papas) with hot sauce. It’s basically a mix of eggs, potatoes and onions that can be kept at room temperature or in a cooler. We use it as a “tapa to go” in Spain when we are travelin,g so it’s a perfect fit for all my fellow travelers out there! I remember when I was a kid and my mom would cook tortilla de patatas for our road trips. She would also make some for me when I had to go on long trips. For this recipe, I went to the closest Walmart in Burbank, 20 min. from my location in Hollywood, a nice ride on a Sunday morning. I thought it’d be a quick errand, but when I started seeing all the Hispanic products they had at the store, I just had to own them all! It was easy to find El Yucateco®, which, by the way, is the number one authentic habanero hot sauce and the number one consumer choice. I grabbed a bottle of the Black Label Reserve and a bottle of the Red Chile Habanero. Both turned out to be great matches for the tortilla de patatas. Plus, it’s super easy to carry them everywhere with you in case you want to use a little bit of extra sauce.
Tip: El Yucateco® is made from habaneros that hand picked from their fields. The sauces are handcrafted to deliver rich flavor with the right amount of heat. The sauce will enhance the flavor of the tortilla in this recipe.
Traditional Tortilla de Patatas and Eggless Tortilla de Patatas
Unfortunately, a couple of years ago I was diagnosed with an egg allergy, so no more tortilla de patatas for me. At that point I thought: «Really? No more tortilla de patatas for me? No, no way!» As a good Spaniard, I quickly came up with an idea to find a replacement and voilá! Here is a recipe for those who can’t wait to try the Spanish omelette and I’ll offer this recipe in two varieties: one with eggs and another one egg-free for those who have the same issue. It’s super easy to make!

- 5 white potatoes
- 6 eggs or 6 tablespoons all-purpose-flour or garbanzo flour
- 2 tablespoons of the Black Label Reserve El Yucateco® Sauce
- 1 tablespoon of the Red Chile Habanero El Yucateco® Sauce
- 1/2 onion
- 6 tablespoons milk
- 50 gr cream cheese
- 1/2 cup of water
- Salt
- Olive Oil
Preparation
In a large bowl, mix the onion, the flour, the milk, the water and the 2 tablespoons of the El Yucateco® Black Label Reserve and a tablespoon of the El Yucateco® Red Chile Habanero. Whisk the egg/flour batter.
Peel and fry the potatoes. Heat oil in a large skillet over medium-high heat. Add the potatoes and turn them occasionally. It should take you 10-15 min to fry them. Make sure they don’t get too crispy. The tortilla has a better flavor when the potatoes are soft. Drain the fries into a colander until they are really dry, otherwise the tortilla will look greasy. Add salt to the potatoes.
Add the potatoes to the batter, add more salt and whisk again.
Remove the olive oil from the skillet (leave enough -2 tablespoons- to cook the tortilla). Cover the base of the skillet with the mix. Lower the heat to medium. Don’t forget to shake the pan frequently.
Cover the skillet with a dish and be ready to turn the tortilla upside down. Don’t be scared when you do it and just flip it! Then add the tortilla to the skillet again until both sides are cooked.
That’s it! Once it’s done, you can either eat it right away, at room temperature or even put it away in the fridge until you are ready for your next trip. It’ll taste even better if you put it in a cooler and eat it later in the day.
